How Can Kitchen Exhaust Hoods Cause Environmental Problems?

Kitchen exhaust hoods are designed to remove heat, smoke, and grease from ovens, stoves, and grills. As grease travels up the hood, it cools and condenses on the exhaust ductwork and fans. Grease can also drain out of the exhaust fan enclosure.

If the fan's grease collection system is not properly maintained, grease will eventually drain onto your roof. Over time, this grease accumulates and washes into the rain gutters which leads to storm sewers. Eventually, this grease reaches local waterways, causing significant environmental damage.

What are the EPA regulations regarding grease contamination?

Grease is classified as a pollutant, and most states have pollution control laws that make it illegal to discharge any pollutants into local waterways such as streams, rivers, and lakes. If grease contamination can be traced back to your restaurant or kitchen, EPA inspectors may require you to clean up the area and impose fines or penalties.
